    Ultrasound for improving the preservation of chicken meat

    <div><p>Abstract The objective of this study was to evaluate the effect of power ultrasound on the microbiota of chicken meat. Samples were treated under the following conditions of frequency and power: 20 kHz and 27.6 W/cm2; 40 kHz and 10.3 W/cm2; 850 kHz and 24.1 W/cm 2. Microbial counts were done before the ultrasound treatment, immediately after and following 7 days of aerobic storage at 4 °C. The results indicate that high intensity ultrasound helps inhibit the growth of lactic acid, mesophilic and psychrophilic bacteria present in chicken meat at the ultrasound frequency levels used in this study. The number of mesophilic bacteria decreased with the ultrasound probe at 20 kHz and 27.6 W/cm2 in relation to the treatment with higher frequency and less intensity. In conclusion, high-intensity ultrasound has a bactericidal effect. Therefore, it can be useful in the preservation of meat products and thus play an important role in the food industry.</p></div

    Oregano Essential Oil in Animal Production

    There is an increasing interest in the use of natural additives in food production such as the use of phytogenic feed additives especially for use in swine and poultry. Essential oils are a natural alternative that can be used in animal feed due to their potential health benefits, improved performance and meat production. Oregano essential oil minimises meat downgrading due to transport stress or the modification of the ruminal microorganisms. This review suggested a promising development of food natural preservative against spoilage microorganisms in food systems by the use of oregano essential oil. The addition of oregano essential oil is a good way of preserving meat and could replace the synthetic antioxidants. Moreover, oregano oil and modified atmosphere packaging exhibit an additive preservation effect in fresh meat. Oregano essential oil is effective for controlling the growth of microorganisms. However, for meat quality, special attention should be put on the optimal oregano essential oil dose and meat handling to control or improve the physical, chemical and sensory properties of meat

    This article gives some of the results from the investigation into Domestic Violence in relationships among adolescents and young people in Bilbao that was carried out during 2008 with funding from the Bilbao City Council Area for Equality and Cooperation. The aim of the research was to find out the beliefs, attitudes and practices that Bilbao's adolescent students and young people express when they talk about being in a couple and domestic violence, as well as the links that they establish between this type of violence and their emotional relationships past, present or future. The article looks in greater depth at gender stereotypes —associated to determined models of masculinity and femininity— that are deeply rooted among young people and adolescents, defining their representations and behaviour guidelines in the field of emotional-sexual relationships and in the virtual changes that are occurring in certain socialisation agencies relating to transmitting these models.En este artículo se dan a conocer algunos de los resultados de la investigación Violencia de género en las relaciones de pareja de adolescentes y jóvenes de Bilbao, que se realizó durante el año 2008 con la financiación del Área de Igualdad y Cooperación del Ayuntamiento de Bilbao. El objetivo de la investigación ha sido conocer las creencias, actitudes y prácticas que expresan en sus discursos estudiantes adolescentes y jóvenes de Bilbao sobre la relación de pareja y la violencia de género, así como los vínculos que establecen entre este tipo de violencia y las relaciones afectivas que mantienen, hayan mantenido o puedan mantener en un futuro próximo. En el artículo se profundiza en los estereotipos de género —asociados a determinados modelos de masculinidad y feminidad— enraizados entre jóvenes y adolescentes que definen las representaciones y pautas de comportamiento de ellos/ellas en el ámbito de las relaciones afectivo-sexuales y en los virtuales cambios que se están produciendo en determinadas agencias de socialización en relación a la transmisión de estos modelos. 

    Diseño de una matriz de análisis para temas ambientales en proyectos de ciencias naturales

    RESUMEN. En ésta investigación estudiamos los contenidos ambientales de dos proyectos de ciencias naturales del libro de texto para el sexto año de educación primaria en México. El trabajo por proyectos, el cual fue formalmente introducido al sistema de educación básica en el último proceso de reforma, es presentado como una estrategia para consolidar el conocimiento de los estudiantes para alcanzar los aprendizajes esperados. Nuestro estudio se guío por dos preguntas principales: ¿Satisfacen los contenidos ambientales de los proyectos seleccionados los aprendizajes esperados del currículo de ciencias naturales para sexto grado? ¿Son estos contenidos ambientales pertinentes con las problemáticas actuales de la educación ambiental para la sustentabilidad? Para contestarlas realizamos una investigación documental en documentos oficiales y diseñamos un instrumento para la codificación y el análisis del contenido de los proyectos. Los resultados se discutieron en tres unidades de análisis de acuerdo a los tres niveles de complejidad planteados en la matriz. Identificamos en los proyectos contenidos ambientales básicos con referencia a los aprendizajes esperados. Consideramos que el éxito potencial del contenido ambiental depende de las competencias de los docentes y de los estudiantes para ponerlos en práctica efectivamente

    Según el Índice Global de Competitividad del Foro Económico Mundial (WEF), Colombia ha conservado durante los últimos años la misma posición en temas de competitividad sin evidenciar una mejoría significativa. La innovación es un eje fundamental del desarrollo y crecimiento económico de las empresas que buscan mantenerse vivos en un mundo cada vez más globalizado y en constante cambio. La presente propuesta de investigación tiene como objetivo principal, diagnosticar las capacidades de Innovación Empresarial en las Mipymes vinculadas al Programa Alianzas para la Innovación de la Cámara de Comercio de Palmira – Valle del Cauca en el 2017. Con ello, se aspira contribuir a la meta del gobierno nacional plasmada en su PND 2014 – 2018 mediante la cual pretende que Colombia sea uno de los países con mayores índices de competitividad y productividad. Para ello se generará, una investigación mixta con estudios descriptivos de corte transversal, tomando como población 50 Mipymes de la ciudad de Palmira que han participado en las versiones 2015 y 2016 en el programa mencionado anteriormente teniendo como muestra el 50% de la población.//Abstract: According to the Global Index of Competitiveness of World Economic Forum (WEF), Colombia has retained during the last years the same position in the issues of competitiveness without evidencing a significant improvement. In addition, it is important to bear in mind that innovation is a fundamental axis of the development and economic growth of companies that seek to stay alive in an increasingly globalized and constantly changing world. The present research proposal has as main objective to diagnose the capabilities of Business Innovation in Msmes linked to the Alliances for Innovation Programme of the Chamber of Commerce of Palmira – Valle del Cauca in 2017. With this, it is hoped to contribute to the goal of the national government embodied in its PND 2014 - 2018, in which it aims to make Colombia one of the countries with the highest levels of competitiveness and productivity.     Implementing front-of-pack nutrition warning labels in Mexico: important lessons for low- and middle-income countries

    Abstract Objective: To analyse the implementation of front-of-pack nutrition labelling (FOPNL) in Mexico. Design: Review of publicly accessible documents, including legislative websites, news sources, and government, intergovernmental, and advocacy reports. Usage of the policy cycle model to analyse the implementation and evaluation stages of Mexico’s General Health Law, amended with FOPNL (2019–2022). Results: In October 2019, the government published a draft modification of the Norma Oficial Mexicana (Official Mexican Standard) to regulate and enforce a new FOPNL warning label system. A 60-d public consultation period followed (October–December 2019), and the regulation was published in March 2020 and implementation began in October 2020. An analysis of nine key provisions of the Standard revealed that the food and beverage industry and its allies weakened some original provisions including health claims, warnings for added sweeteners and display areas. On the other hand, local and international public health groups maintained key regulations including the ban on cartoon character advertisements, standardised portions and nutrient criteria following international best practices. Early implementation appears to have high compliance and helped contribute to reformulating unhealthy products. Continued barriers to implementation include industry efforts to create double fronts and market their cartoon characters on social media and through digitalised marketing. Conclusion: Early success in implementing the new FOPNL system in Mexico was the result of an inclusive and participatory regulatory process dedicated to maintaining public health advances, local and international health advocacy support, and continued monitoring. Other countries proposing and enacting FOPNL should learn from the Mexican experience to maintain scientifically proven best practices, counter industry barriers and minimise delays in implementation

    Expanding the knowledge of environmental sustainability in the biopharmaceutical industry: from manufacturing technologies to supply chain

    The biopharmaceutical industry is characterized by a rapidly growing market of its novel products, whose sustainability has hardly been evaluated. Only a small number of sustainability assessments have been published on this field, including a few Life Cycle Assessments (LCAs) which focused either on specific unit operations or on comparing particular equipments. In this PhD dissertation, the environmental sustainability of freeze drying as a key technology applied when manufacturing biopharmaceuticals is assessed. Two studies are presented evaluating (1) the resource efficiency of a typical batch freeze drying device and (2) the environmental sustainability of an industrial freeze drying process. In the second part, the environmental impact of selected biological medicines is assessed, focusing not only on their manufacturing processes but on the upstream and downstream supply chains associated to the products. Exergy and/or LCA methods are used as assessment tools. Hotspots are identified and measures for potential improvement are proposed
